Cannabis-Infused Filipino Kakanin (Biko)

A sticky-sweet Filipino rice cake made with coconut milk and brown sugar, enriched with cannabis coconut oil for a soothing dessert.

Ingredients:

  • 2 cups glutinous rice
  • 2 cups coconut milk
  • 1 cup brown sugar
  • 1/4 tsp salt
  • 1 tbsp cannabis coconut oil

Instructions:

  1. Cook rice: Steam or cook rice until soft.
  2. Make syrup: Simmer coconut milk, sugar, salt, and cannabis oil until thickened.
  3. Combine: Mix rice with coconut mixture and cook until sticky.
  4. Bake (optional): Spread in pan, top with latik or more syrup, bake 10 mins to set.
